Ingredients

  • Rolled oats - 1 cup

  • Egg - 1 large
  • Grated Parmesan cheese - 1/4 cup
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Chopped fresh parsley - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, grated zucchini, shredded carrots, and chopped green onions.
  3. In a separate bowl, whisk the egg and then add it to the oat mixture along with the grated Parmesan cheese, garlic powder, salt, black pepper, and chopped parsley.
  4. Mix all ingredients until well combined. If the mixture is too dry, add a splash of water to moisten.
  5. Using your hands, form the mixture into small bite-sized balls or patties and place them on the prepared baking sheet.
