Ingredients

  • Rolled oats - 1 cup
  • Water - 2 cups
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Spinach - 1 cup, fresh
  • Cherry tomatoes - 1 cup, halved
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1, sliced
  • Green onions - 2, chopped

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Add 1 cup of rolled oats to the boiling water and reduce heat to a simmer. Cook for about 5-7 minutes, stirring occasionally, until the oats are creamy.
  3. While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
  4. Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
  5. Add 1 cup of fresh spinach and 1 cup of halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the spinach wilts and the tomatoes soften.
  6. Stir in 2 tablespoons of nutritional yeast, salt, and black pepper to taste into the vegetable mixture.
  7. Once the oats are cooked, divide them into two bowls and top each bowl with the sautéed vegetable mixture.
  8. Garnish with sliced avocado and chopped green onions before serving.
