Ingredients
- Rolled oats - 1 cup
- Water - 2 cups
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Spinach - 1 cup, fresh
- Cherry tomatoes - 1 cup, halved
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Avocado - 1, sliced
- Green onions - 2, chopped
Steps
- In a medium saucepan, bring 2 cups of water to a boil.
- Add 1 cup of rolled oats to the boiling water and reduce heat to a simmer. Cook for about 5-7 minutes, stirring occasionally, until the oats are creamy.
- While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
- Add 1 cup of fresh spinach and 1 cup of halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the spinach wilts and the tomatoes soften.
- Stir in 2 tablespoons of nutritional yeast, salt, and black pepper to taste into the vegetable mixture.
- Once the oats are cooked, divide them into two bowls and top each bowl with the sautéed vegetable mixture.
- Garnish with sliced avocado and chopped green onions before serving.
