Ingredients

  • Egg noodles - 100 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Zucchini - 1 small, grated
  • Carrot - 1 small, grated
  • Spinach - 50 grams, chopped
  • Ricotta cheese - 100 grams
  • Eggs - 2 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the egg noodles according to package instructions; drain and set aside.
  3. In a skillet, heat the olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
  4. Add the grated zucchini and carrot to the skillet, cooking for another 3-4 minutes until softened.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  6. In a large bowl, combine the cooked noodles, sautéed vegetables, ricotta cheese, eggs, salt, black pepper, and paprika. Mix well to combine.
  7. Transfer the mixture to a greased baking dish and spread evenly.
  8. Sprinkle the grated Parmesan cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
  10. Allow to cool for a few minutes before slicing and serving.
