- Egg noodles - 100 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Zucchini - 1 small, grated
- Carrot - 1 small, grated
- Spinach - 50 grams, chopped
- Ricotta cheese - 100 grams
- Eggs - 2 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
Steps
- Preheat the oven to 180°C (350°F).
- Cook the egg noodles according to package instructions; drain and set aside.
- In a skillet, heat the olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
- Add the grated zucchini and carrot to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a large bowl, combine the cooked noodles, sautéed vegetables, ricotta cheese, eggs, salt, black pepper, and paprika. Mix well to combine.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle the grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
- Allow to cool for a few minutes before slicing and serving.
