  • Cold water - 30 ml
  • Salt - 1/4 teaspoon
  • Cremini mushrooms - 200 grams, sliced
  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Olive oil - 1 tablespoon
  • Egg - 1 large
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the cold water, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. While the dough chills, heat olive oil in a skillet over medium heat. Add the shallot and garlic, sautéing for 2 minutes until softened.

  7. Spread the mushroom mixture evenly over the tart crust, then pour the ricotta mixture on top, spreading it evenly.
