- Cremini mushrooms - 200 grams, sliced
- Shallot - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 1 tablespoon
- Egg - 1 large
- Ricotta cheese - 100 grams
- Parmesan cheese - 30 grams, grated
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- While the dough chills, heat olive oil in a skillet over medium heat. Add the shallot and garlic, sautéing for 2 minutes until softened.
- Add the sliced mushrooms and thyme to the skillet. Cook for about 8-10 minutes until the mushrooms are browned and any liquid has evaporated. Remove from heat and let cool.

- In a bowl, combine the ricotta cheese, grated Parmesan, egg, and black pepper. Mix until smooth.
- Spread the mushroom mixture evenly over the tart crust, then pour the ricotta mixture on top, spreading it evenly.
