- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Mixed mushrooms (cremini, button, shiitake) - 300 grams, sliced
- Vegetable broth - 500 milliliters
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Heavy cream - 100 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped shallots and sauté for 3-4 minutes until they become translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced mushrooms to the pan and cook for about 5-7 minutes, stirring occasionally, until they are soft and browned.
- Pour in the vegetable broth, and add the dried thyme and bay leaf. Bring to a simmer and let it cook for 10 minutes.
- Remove the bay leaf, then use an immersion blender to puree the soup until smooth, or transfer it in batches to a blender.
- Return the soup to the heat, stir in the heavy cream, and season with salt and black pepper to taste. Heat through for another 5 minutes.
- Serve hot, garnished with fresh parsley.
