Ingredients

  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Mixed mushrooms (cremini, button, shiitake) - 300 grams, sliced
  • Vegetable broth - 500 milliliters
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Heavy cream - 100 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped shallots and sauté for 3-4 minutes until they become translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced mushrooms to the pan and cook for about 5-7 minutes, stirring occasionally, until they are soft and browned.
  5. Pour in the vegetable broth, and add the dried thyme and bay leaf. Bring to a simmer and let it cook for 10 minutes.
  6. Remove the bay leaf, then use an immersion blender to puree the soup until smooth, or transfer it in batches to a blender.
  7. Return the soup to the heat, stir in the heavy cream, and season with salt and black pepper to taste. Heat through for another 5 minutes.
  8. Serve hot, garnished with fresh parsley.
