- Arborio rice - 1 cup
- Mushrooms (cremini or button) - 200 grams, sliced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 3 cups
- Olive oil - 2 tablespoons
- White wine (optional, Kosher) - 1/4 cup
- Parmesan cheese (grated, Kosher) - 1/4 cup
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the vegetable broth in a saucepan over low heat and keep it warm.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
- Add the sliced mushrooms to the pan and cook for an additional 5-7 minutes, until softened and browned.
- Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to toast slightly.
- If using, pour in the white wine and stir until it is mostly absorbed by the rice.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until each ladle is mostly absorbed before adding the next.
- Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
- Remove from heat and stir in the grated Parmesan cheese, chopped parsley, salt, and pepper to taste.
- Let the risotto sit for a couple of minutes before serving. Enjoy!
