Ingredients

  • Arborio rice - 1 cup
  • Mushrooms (cremini or button) - 200 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 3 cups
  • Olive oil - 2 tablespoons
  • White wine (optional, Kosher) - 1/4 cup
  • Parmesan cheese (grated, Kosher) - 1/4 cup
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the vegetable broth in a saucepan over low heat and keep it warm.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
  3. Add the sliced mushrooms to the pan and cook for an additional 5-7 minutes, until softened and browned.
  4. Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to toast slightly.
  5. If using, pour in the white wine and stir until it is mostly absorbed by the rice.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until each ladle is mostly absorbed before adding the next.
  7. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  8. Remove from heat and stir in the grated Parmesan cheese, chopped parsley, salt, and pepper to taste.
  9. Let the risotto sit for a couple of minutes before serving. Enjoy!
