  • Chicken breasts - 2 pieces (about 200g each)

  • Mushrooms (button or cremini) - 150g, chopped
  • Garlic - 2 cloves, minced
  • Cream cheese - 50g, softened
  • Parmesan cheese - 30g, grated
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Breadcrumbs - 30g (optional for topping)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped mushrooms to the skillet and cook for 5-7 minutes until they are softened and any moisture has evaporated.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.
