Ingredients

  • 2 large bell peppers - any color
  • 150 grams fresh spinach, chopped
  • 100 grams mushrooms, finely chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons olive oil
  • 50 grams feta cheese, crumbled (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the tops off the bell peppers and remove seeds and membranes, then set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  4. Add finely chopped mushrooms to the skillet and cook until softened, about 5 minutes.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  6. Add the cooked quinoa, oregano, basil, salt, and pepper to the skillet, mixing well to combine. Remove from heat.
  7. If using, fold in the crumbled feta cheese into the quinoa mixture.
  8. Stuff each bell pepper with the mushroom and spinach quinoa mixture, pressing down gently to pack it in.
  9. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  10. Bake in the preheated oven for 25-30 minutes. Remove the foil for the last 5 minutes to lightly brown the tops if desired.
  11. Remove from the oven and let cool for a few minutes before serving.
