Ingredients
- 2 large bell peppers - any color
- 150 grams fresh spinach, chopped
- 100 grams mushrooms, finely chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked quinoa
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt - to taste
- Pepper - to taste
- 2 tablespoons olive oil
- 50 grams feta cheese, crumbled (optional)
Steps
- Preheat the oven to 190°C (375°F).
- Slice the tops off the bell peppers and remove seeds and membranes, then set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add finely chopped mushrooms to the skillet and cook until softened, about 5 minutes.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- Add the cooked quinoa, oregano, basil, salt, and pepper to the skillet, mixing well to combine. Remove from heat.
- If using, fold in the crumbled feta cheese into the quinoa mixture.
- Stuff each bell pepper with the mushroom and spinach quinoa mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25-30 minutes. Remove the foil for the last 5 minutes to lightly brown the tops if desired.
- Remove from the oven and let cool for a few minutes before serving.
