- 1 medium acorn squash - halved and seeds removed
- 1 cup cooked quinoa
- 1 cup cooked brown rice
- 1/2 cup cooked green lentils
- 1/2 cup canned chickpeas - drained and rinsed
- 2 tablespoons olive oil
- 1 small onion - diced
- 2 cloves garlic - minced
- 1 cup mushrooms - chopped
- 2 cups fresh spinach - chopped
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper - to taste
- 1/4 cup grated Parmesan cheese - optional
Steps
- Preheat your oven to 200°C (400°F).
- Drizzle the cut sides of the acorn squash with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet. Roast in the preheated oven for 25-30 minutes or until tender.
- While the squash is roasting, heat olive oil in a skillet over medium heat. Add the onion and garlic, sauté until translucent, about 3-4 minutes.
- Add the chopped mushrooms and cook for an additional 5-7 minutes until they soften and release their moisture.
- Stir in the chopped spinach, thyme, and smoked paprika. Cook until the spinach wilts, about 2-3 minutes. Season with salt and pepper to taste.
- In a large bowl, combine the cooked quinoa, brown rice, lentils, chickpeas, and the sautéed mushroom and spinach mixture. Mix well to combine.
- Once the acorn squash is done roasting, remove from the oven and carefully turn them cut side up. Fill each half with the lentil mixture and top with grated Parmesan cheese if desired.
- Return the stuffed squash to the oven and bake for another 10-15 minutes until heated through.
