Ingredients

  • Acorn squash - 1 medium
  • Olive oil - 2 tablespoons
  • Mushrooms (cremini or button) - 200 grams, diced
  • Fresh spinach - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Parmesan cheese (optional) - 30 grams, grated
  • Bread crumbs - 30 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Brush the insides of the squash halves with 1 tablespoon of olive oil and sprinkle with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast for 25-30 minutes, until tender.
  5. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  6. Add the minced garlic and diced mushrooms to the skillet. Cook for an additional 5-7 minutes until the mushrooms are browned and any liquid has evaporated.
  7. Stir in the chopped spinach, salt, black pepper, and nutmeg. Cook for another 2-3 minutes until the spinach is wilted. Remove from heat.
  8. In a bowl, combine the mushroom and spinach mixture with bread crumbs, grated Parmesan cheese (if using), and chopped parsley.
  9. Once the acorn squash is done roasting, carefully turn them cut-side up and fill each half with the mushroom-spinach mixture.
  10. Return the stuffed squash to the oven and bake for an additional 10 minutes until heated through and lightly golden on top.
