Ingredients
- Quinoa - 1 cup
- Lentils (cooked) - 1/2 cup
- Mushrooms (sliced) - 200 grams
- Fresh spinach - 150 grams
- Onion (chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Soy sauce (low sodium) - 1 tablespoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons
- Almond milk (unsweetened) - 1/2 cup
- Breadcrumbs (optional) - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- Rinse and drain the quinoa, then combine it with 2 cups of vegetable broth in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
- Add minced garlic and sliced mushrooms to the skillet, cooking for another 5-7 minutes until the mushrooms are browned and tender.
- Stir in the fresh spinach, cooking until wilted. Add the cooked lentils, soy sauce, dried thyme, salt, and black pepper, mixing well.
- In a large bowl, combine the cooked quinoa with the mushroom-spinach-lentil mixture. Stir in nutritional yeast and almond milk until well incorporated.
- Transfer the mixture into a greased baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
- Bake in the preheated oven for 20-25 minutes until heated through and the top is slightly golden.
- Remove from the oven, let it cool for a few minutes, and serve warm.
