Ingredients

  • Quinoa - 1 cup
  • Lentils (cooked) - 1/2 cup
  • Mushrooms (sliced) - 200 grams
  • Fresh spinach - 150 grams
  • Onion (chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Soy sauce (low sodium) - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Almond milk (unsweetened) - 1/2 cup
  • Breadcrumbs (optional) - 1/4 cup

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse and drain the quinoa, then combine it with 2 cups of vegetable broth in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  3. While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  4. Add minced garlic and sliced mushrooms to the skillet, cooking for another 5-7 minutes until the mushrooms are browned and tender.
  5. Stir in the fresh spinach, cooking until wilted. Add the cooked lentils, soy sauce, dried thyme, salt, and black pepper, mixing well.
  6. In a large bowl, combine the cooked quinoa with the mushroom-spinach-lentil mixture. Stir in nutritional yeast and almond milk until well incorporated.
  7. Transfer the mixture into a greased baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
  8. Bake in the preheated oven for 20-25 minutes until heated through and the top is slightly golden.
  9. Remove from the oven, let it cool for a few minutes, and serve warm.
