Ingredients

  • Quinoa - 1 cup (185g)
  • Water - 2 cups (480ml)
  • Olive oil - 2 tablespoons (30ml)
  • Onion, diced - 1 small (about 100g)
  • Garlic, minced - 2 cloves
  • Mushrooms, sliced - 200g
  • Fresh spinach, chopped - 150g
  • Eggs - 2 large
  • Milk - 1/2 cup (120ml)
  • Parmesan cheese, grated - 1/2 cup (50g)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried thyme - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the quinoa under cold water, then combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  4. Add minced garlic and sliced mushrooms to the skillet, cooking for an additional 5-7 minutes until the mushrooms are tender and lightly browned.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  6. In a large bowl, whisk together the eggs, milk, grated Parmesan cheese, salt, black pepper, and dried thyme.
  7. Add the cooked quinoa and mushroom-spinach mixture to the egg mixture, stirring until well combined.
  8. Transfer the mixture to a greased 9-inch (23 cm) baking dish and spread evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and lightly golden on top.
