- Green or brown lentils - 100 grams
- Olive oil - 1 tablespoon
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Canned diced tomatoes - 200 grams
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, fresh
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery to the pot and sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the rinsed lentils, vegetable broth, canned tomatoes, bay leaf, thyme, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the lentils are tender.
- Remove the bay leaf and stir in the fresh spinach, cooking for another 2-3 minutes until wilted.
