Ingredients

  • Green lentils - 100 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 1/4 cup, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the lentils under cold water and then place them in a pot with 3 cups of water. Bring to a boil and then reduce to a simmer, cooking for about 20 minutes or until tender but not mushy.
