Ingredients
- Green lentils - 100 grams
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the lentils under cold water and then place them in a pot with 3 cups of water. Bring to a boil and then reduce to a simmer, cooking for about 20 minutes or until tender but not mushy.
- While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.
- Once the lentils are cooked, drain them and let them cool slightly. Then, combine the lentils with the prepared vegetables in a large mixing bowl.
- Pour the dressing over the lentil and vegetable mixture, tossing gently to combine. Adjust seasoning to taste.
- Serve the salad at room temperature or chilled, garnished with additional parsley if desired.
