- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the green lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables start to soften.
- Stir in the diced red bell pepper and zucchini, and cook for an additional 3-4 minutes.
- Add the rinsed lentils, vegetable broth, dried thyme, bay leaf, salt, and black pepper. Bring to a boil.
- Once boiling, reduce heat to low and cover the pot. Let it simmer for 25-30 minutes, or until the lentils are tender.
- Remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
