Ingredients

  • Green lentils - 100 grams

  • Diced tomatoes - 200 grams (canned or fresh)
  • Vegetable broth - 500 milliliters
  • Spinach - 50 grams, chopped
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat and add the chopped onion, cooking until translucent, about 3-4 minutes.
