  • Canned chickpeas - 200 grams, drained and rinsed
  • Basmati rice - 150 grams
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the brown lentils under cold water and set aside.
  2. In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
  4. Stir in the diced carrot and bell pepper, cooking for another 5 minutes until they start to soften.
  5. Add the curry powder, cumin, turmeric, salt, and black pepper to the vegetables, stirring well to coat.
  6. Pour in the vegetable broth and coconut milk, then add the rinsed lentils. Bring the mixture to a boil, then reduce the heat to a simmer.
  7. Cover and cook for about 25 minutes, or until the lentils are tender, stirring occasionally.
  8. Meanwhile, rinse the basmati rice and cook it according to package instructions, typically using 1 part rice to 1.5 parts water.
  9. Once the lentils are cooked, stir in the drained chickpeas and cook for another 5 minutes to heat through.
  10. Serve the curry over a bed of rice, garnished with fresh cilantro.
