Ingredients

  • Green or brown lentils - 100g
  • Carrot - 1 medium, diced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Coconut milk - 200ml
  • Vegetable broth - 250ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Basmati rice - 150g

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the onion, cooking for another minute until fragrant.

  8. Once the curry is ready, season with salt and black pepper to taste.
