Ingredients

  • Green or brown lentils - 100 grams
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut milk - 200 ml
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Curry powder - 2 teaspoons
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the lentils under cold water until the water runs clear, then set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
  4. Stir in the diced carrot, red bell pepper, and zucchini. Cook for about 5 minutes, stirring occasionally.
  5. Add the curry powder, cumin, turmeric, salt, and black pepper to the vegetables. Cook for another minute to toast the spices.
  6. Pour in the rinsed lentils, coconut milk, and vegetable broth. Stir well and bring to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils are tender.
  8. Once cooked, taste and adjust the seasoning if necessary. Remove from heat and let it sit for 5 minutes.
  9. Serve hot, garnished with fresh cilantro.
