- Green or brown lentils - 100 grams
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut milk - 200 ml
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Curry powder - 2 teaspoons
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the lentils under cold water until the water runs clear, then set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
- Stir in the diced carrot, red bell pepper, and zucchini. Cook for about 5 minutes, stirring occasionally.
- Add the curry powder, cumin, turmeric, salt, and black pepper to the vegetables. Cook for another minute to toast the spices.
- Pour in the rinsed lentils, coconut milk, and vegetable broth. Stir well and bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils are tender.
- Once cooked, taste and adjust the seasoning if necessary. Remove from heat and let it sit for 5 minutes.
- Serve hot, garnished with fresh cilantro.
