- Spinach - 50 grams, fresh
- Soy sauce - 1 tablespoon
- Cumin powder - 1 teaspoon

Steps
- Rinse the brown lentils and brown rice under cold water until the water runs clear.
- In a medium saucepan, combine the lentils, brown rice, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until both the lentils and rice are tender and the broth is absorbed.
- While the lentils and rice are cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the skillet and continue to sauté for another 5 minutes until the vegetables are tender.
- Stir in the fresh spinach, soy sauce, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts.
- Once the lentils and rice are cooked, fluff them with a fork and mix them into the skillet with the sautéed vegetables. Drizzle with lemon juice and toss everything together.
- Serve the lentil and rice mixture in bowls and garnish with fresh parsley.
