- Red bell pepper - 1 medium, diced

- Eggs - 2 large
- Parmesan cheese - 2 tablespoons (30 g), grated (optional)
- Fresh herbs (like parsley or chives) - for garnish
Steps
- In a medium saucepan, bring the water and vegetable broth to a boil. Gradually whisk in the grits, reduce the heat to low, and cook for about 20 minutes, stirring occasionally, until thickened.
- While the grits are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
