  • Spinach - 2 cups (60 g), fresh
  • Cherry tomatoes - 1 cup (150 g), halved
  • Red bell pepper - 1 medium, diced
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 2 large
  • Parmesan cheese - 2 tablespoons (30 g), grated (optional)
  • Fresh herbs (like parsley or chives) - for garnish

Steps

  1. In a medium saucepan, bring the water and vegetable broth to a boil. Gradually whisk in the grits, reduce the heat to low, and cook for about 20 minutes, stirring occasionally, until thickened.
  2. While the grits are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and cherry tomatoes to the skillet, cooking for about 5 minutes until softened. Stir in the spinach and cook until wilted, about 2 minutes.
  4. Season the vegetable mixture with salt and black pepper to taste. Remove from heat and set aside.
