Ingredients

  • Eggplant - 1 medium-sized
  • Salt - 1 teaspoon
  • Ricotta cheese - 200 grams
  • Fresh spinach - 100 grams, chopped
  • Parmesan cheese - 50 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Marinara sauce - 200 ml
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Italian seasoning - 1 teaspoon
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the eggplant lengthwise into thin strips (about 1/4 inch thick) and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat dry with paper towels.
  4. In a skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a mixing bowl, combine ricotta cheese, sautéed spinach, grated Parmesan cheese, black pepper, and Italian seasoning. Mix well.
  6. On a clean surface, lay out each eggplant slice and place about 2 tablespoons of the ricotta mixture at one end. Roll the eggplant slice around the filling and place seam-side down in a baking dish.
  7. Pour the marinara sauce evenly over the rolled eggplant and sprinkle shredded mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh basil before serving.
