- Eggplant - 1 medium-sized
- Salt - 1 teaspoon
- Ricotta cheese - 200 grams
- Fresh spinach - 100 grams, chopped
- Parmesan cheese - 50 grams, grated
- Mozzarella cheese - 100 grams, shredded
- Marinara sauce - 200 ml
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Italian seasoning - 1 teaspoon
- Fresh basil - for garnish
Steps
- Preheat the oven to 190°C (375°F).
- Slice the eggplant lengthwise into thin strips (about 1/4 inch thick) and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with paper towels.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
- In a mixing bowl, combine ricotta cheese, sautéed spinach, grated Parmesan cheese, black pepper, and Italian seasoning. Mix well.
- On a clean surface, lay out each eggplant slice and place about 2 tablespoons of the ricotta mixture at one end. Roll the eggplant slice around the filling and place seam-side down in a baking dish.
- Pour the marinara sauce evenly over the rolled eggplant and sprinkle shredded mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
