- milk - 1 cup (240ml)
- eggs - 2 large
- salt - 1/4 teaspoon
- butter - 2 tablespoons (30g), melted
- fresh spinach - 2 cups (60g), chopped
- feta cheese - 1/2 cup (75g), crumbled
- garlic - 2 cloves, minced
- olive oil - 1 tablespoon
- black pepper - to taste
Steps
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Stir in the melted butter and let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
- Pour about 1/4 cup of the batter into the skillet, tilting the pan to spread it evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter, stacking the crepes on a plate.
- In another pan, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add the chopped spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and stir in the crumbled feta cheese and black pepper.
- To assemble, place a generous spoonful of the spinach and cheese mixture on one half of a crepe. Fold over the other half and serve immediately.
