  • all-purpose flour - 1 cup (120g)
  • milk - 1 cup (240ml)
  • eggs - 2 large
  • salt - 1/4 teaspoon
  • butter - 2 tablespoons (30g), melted
  • fresh spinach - 2 cups (60g), chopped
  • feta cheese - 1/2 cup (75g), crumbled
  • garlic - 2 cloves, minced
  • olive oil - 1 tablespoon
  • black pepper - to taste

Steps

  1. In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Stir in the melted butter and let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
  3. Pour about 1/4 cup of the batter into the skillet, tilting the pan to spread it evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter, stacking the crepes on a plate.
  4. In another pan, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Add the chopped spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and stir in the crumbled feta cheese and black pepper.
