  • all-purpose flour - 100 grams
  • milk - 250 milliliters
  • eggs - 2 large
  • salt - 1/4 teaspoon
  • olive oil - 1 tablespoon
  • cheddar cheese - 50 grams, grated
  • mozzarella cheese - 50 grams, grated
  • cream cheese - 50 grams, softened
  • fresh parsley - 2 tablespoons, chopped
  • black pepper - to taste

Steps

  1. In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little olive oil to coat the surface.
  3. Pour a ladleful of the crepe batter into the skillet, swirling to evenly coat the bottom. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden.
  4. Flip the crepe and cook for an additional minute on the other side. Transfer to a plate and repeat with the remaining batter, stacking the crepes.
