- milk - 250 milliliters
- eggs - 2 large
- salt - 1/4 teaspoon
- olive oil - 1 tablespoon
- cheddar cheese - 50 grams, grated
- mozzarella cheese - 50 grams, grated
- cream cheese - 50 grams, softened
- fresh parsley - 2 tablespoons, chopped
- black pepper - to taste
Steps
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little olive oil to coat the surface.
- Pour a ladleful of the crepe batter into the skillet, swirling to evenly coat the bottom. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden.
