- whole wheat flour - 1 cup

- spinach - 1 cup, chopped
- mushrooms - 1/2 cup, sliced
- feta cheese - 1/2 cup, crumbled
- black pepper - to taste

Steps
- In a mixing bowl, whisk together whole wheat flour, milk, eggs, olive oil, and salt until smooth. Let it rest for 10 minutes.
- While the batter rests, heat a non-stick skillet over medium heat and add a splash of olive oil.
- Add the chopped spinach and sliced mushrooms to the skillet and sauté for about 5-7 minutes until the vegetables are tender. Season with black pepper and remove from heat.
- Heat the skillet again and pour about 1/4 cup of the batter into the center, swirling to spread it evenly into a thin layer.
