Ingredients

  • whole wheat flour - 1 cup
  • milk - 1 cup
  • eggs - 2 large
  • olive oil - 1 tablespoon
  • salt - 1/4 teaspoon
  • spinach - 1 cup, chopped
  • mushrooms - 1/2 cup, sliced
  • feta cheese - 1/2 cup, crumbled
  • black pepper - to taste
  • fresh parsley - for garnish

Steps

  1. In a mixing bowl, whisk together whole wheat flour, milk, eggs, olive oil, and salt until smooth. Let it rest for 10 minutes.
  2. While the batter rests, heat a non-stick skillet over medium heat and add a splash of olive oil.
  3. Add the chopped spinach and sliced mushrooms to the skillet and sauté for about 5-7 minutes until the vegetables are tender. Season with black pepper and remove from heat.
  4. Heat the skillet again and pour about 1/4 cup of the batter into the center, swirling to spread it evenly into a thin layer.
  5. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another 1-2 minutes.
  6. Remove the crepe and repeat the process with the remaining batter, adding more oil to the skillet as necessary.
  7. Once all crepes are cooked, fill each crepe with the sautéed spinach and mushroom mixture, and sprinkle crumbled feta cheese on top.
  8. Fold the crepes over and serve warm, garnished with fresh parsley.
