Ingredients

  • Fresh corn kernels - 1 cup
  • Almond flour - 1/2 cup
  • Eggs - 2 large
  • Chopped green onions - 1/4 cup
  • Cilantro, chopped - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 3 tablespoons (for frying)

Steps

  1. In a mixing bowl, combine the fresh corn kernels, almond flour, eggs, chopped green onions, cilantro, garlic powder, onion powder, salt, and black pepper.
  2. Mix until all ingredients are well combined and a thick batter forms.
  3. Heat coconut oil in a skillet over medium heat.
  4. Once the oil is hot, scoop about 2 tablespoons of the corn mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
  5. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
