Ingredients

  • Chicken breast - 200 grams, diced
  • Cauliflower rice - 1 cup (about 100 grams)
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Bell pepper - 1/2, diced
  • Onion - 1/2, chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the diced chicken breast to the pot, cooking until it is no longer pink, about 5-7 minutes.
  3. Stir in the diced carrots, celery, and bell pepper, cooking for an additional 5 minutes until the vegetables start to soften.
  4. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  5. Add the cauliflower rice, dried thyme, dried oregano, salt, and black pepper. Stir well and let simmer for 10-15 minutes, until all vegetables are tender.
  6. Taste and adjust seasoning if necessary. Remove from heat and let cool slightly before serving.
  7. Ladle the soup into bowls and garnish with fresh parsley before serving.
