- All-purpose flour - 120 grams
- Unsalted butter - 60 grams, cold and cubed
- Sharp cheddar cheese - 100 grams, grated
- Parmesan cheese - 30 grams, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Ice water - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the all-purpose flour, salt, black pepper, and paprika.
- Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Stir in the grated sharp cheddar and Parmesan cheeses until evenly distributed.
- Add the ice water, one tablespoon at a time, mixing until the dough comes together but is not sticky.
- Turn the dough out onto a lightly floured surface and roll it out to a thickness of about 5mm (1/4 inch).
- Cut the dough into strips, approximately 1 cm wide and 10 cm long, and place them on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the cheese straws are golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
