Ingredients

  • All-purpose flour - 120 grams
  • Unsalted butter - 60 grams, cold and cubed
  • Sharp cheddar cheese - 100 grams, grated
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Ice water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, salt, black pepper, and paprika.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Stir in the grated sharp cheddar and Parmesan cheeses until evenly distributed.
  5. Add the ice water, one tablespoon at a time, mixing until the dough comes together but is not sticky.
  6. Turn the dough out onto a lightly floured surface and roll it out to a thickness of about 5mm (1/4 inch).
  7. Cut the dough into strips, approximately 1 cm wide and 10 cm long, and place them on the prepared baking sheet.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese straws are golden brown and crispy.
  9. Remove from the oven and let cool slightly before serving.
