Ingredients

  • all-purpose flour - 60 grams
  • water - 120 ml
  • unsalted butter - 30 grams
  • eggs - 2 large
  • cheddar cheese, grated - 50 grams
  • parmesan cheese, grated - 30 grams
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • garlic powder - 1/4 teaspoon
  • fresh parsley, chopped - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the water, butter, salt, black pepper, and garlic powder. Bring to a boil over medium heat.
  3. Once boiling, add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let it cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Stir in the grated cheddar and parmesan cheese until well combined.
  6. Using a spoon or a piping bag, drop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 5 cm apart.
  7. Bake in the preheated oven for 20 minutes, or until the puffs are golden brown and puffed up.
  8. Remove from the oven and allow to cool slightly before serving. Garnish with chopped parsley if desired.
