Ingredients
- Phyllo dough - 4 sheets
- Ricotta cheese - 100 grams
- Feta cheese - 50 grams, crumbled
- Mozzarella cheese - 50 grams, shredded
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, beaten (for egg wash)
- Olive oil - 2 tablespoons
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the ricotta, feta, mozzarella, parsley, salt, and black pepper. Mix until well combined.
- Lay one sheet of phyllo dough on a clean surface and brush with olive oil. Place a second sheet on top and brush again with olive oil.
- Cut the layered phyllo into 4 equal rectangles.
- Place a tablespoon of the cheese mixture at one end of each rectangle, then fold the phyllo over the filling to create a triangle shape, sealing the edges by pressing down.
- Repeat with remaining phyllo sheets and filling.
- Transfer the bourekas to a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
