  • Butter - 2 tablespoons (30g), melted
  • Ricotta cheese - 1/2 cup (120g)
  • Cream cheese - 1/4 cup (60g), softened
  • Chives - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth to create a batter. Let it rest for 10 minutes.
  2. In another bowl, mix the ricotta cheese, cream cheese, chopped chives, and black pepper until well combined.
  3. Heat a non-stick skillet over medium heat and add a small amount of olive oil.
  4. Pour a ladleful of batter into the skillet, swirling it to create a thin layer. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned. Flip and cook for an additional minute. Repeat until all batter is used.

  6. In the same skillet, add a little more olive oil and place the filled blintzes seam-side down. Cook for about 2-3 minutes on each side until golden brown and crispy.
