- Milk - 1 cup (240ml)
- Eggs - 2 large
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons (30g), melted
- Ricotta cheese - 1/2 cup (120g)
- Cream cheese - 1/4 cup (60g), softened
- Chives - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth to create a batter. Let it rest for 10 minutes.
- In another bowl, mix the ricotta cheese, cream cheese, chopped chives, and black pepper until well combined.
- Heat a non-stick skillet over medium heat and add a small amount of olive oil.
- Pour a ladleful of batter into the skillet, swirling it to create a thin layer. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned. Flip and cook for an additional minute. Repeat until all batter is used.
- Place each cooked blintz on a plate and add a spoonful of the cheese filling to one edge. Roll the blintz tightly, folding in the sides as you go.
- In the same skillet, add a little more olive oil and place the filled blintzes seam-side down. Cook for about 2-3 minutes on each side until golden brown and crispy.
