Ingredients

  • Cauliflower - 400 grams (1 medium head)

  • Bell pepper - 1 small, diced
  • Green onion - 2 stalks, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains (about 10-15 seconds). Set aside.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the chopped onion and diced bell pepper to the skillet and sauté for 3-4 minutes until they start to soften.
  5. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  6. Add the processed cauliflower rice to the skillet and mix well with the sautéed vegetables.
  7. Sprinkle in the cumin, paprika, salt, and black pepper, then stir to combine all the ingredients.
  8. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower rice is tender but not mushy.
  9. Remove from heat and stir in the chopped green onion.
