- Bell pepper - 1 small, diced
- Green onion - 2 stalks, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Remove the leaves and stem from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains (about 10-15 seconds). Set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and diced bell pepper to the skillet and sauté for 3-4 minutes until they start to soften.
- Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the processed cauliflower rice to the skillet and mix well with the sautéed vegetables.
