  • Milk - 250 ml
  • Vegetable broth - 100 ml
  • Cheddar cheese - 100 grams (shredded)
  • Spinach - 50 grams (fresh, chopped)
  • Cherry tomatoes - 100 grams (halved)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon (chopped, for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the chopped spinach and halved cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until the spinach is wilted. Remove from heat.
  4. In a large mixing bowl, whisk together the eggs, milk, vegetable broth, salt, black pepper, and dried oregano until well combined.
  5. Add the cubed stale bread to the egg mixture and gently fold in the sautéed vegetables and shredded cheddar cheese until evenly coated.
  6. Transfer the mixture to a greased baking dish and spread it out evenly.
  7. Bake in the preheated oven for 30 minutes, or until the top is golden brown and the bread pudding is set.
  8. Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley before serving.
