Ingredients
- All-purpose flour - 1 cup (120g)
- Eggs - 2 large
- Milk - 1 cup (240ml)
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons (30g), melted
- Fresh spinach - 2 cups (60g), chopped
- Mushrooms - 1 cup (70g), diced
- Onion - 1 small, finely chopped
- Cream cheese - 100g, softened
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for 10 minutes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
- Add the diced mushrooms and cook for another 5 minutes until they are soft and any moisture has evaporated.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a separate bowl, mix the sautéed vegetables with the softened cream cheese and black pepper until well combined.
- In a non-stick skillet, add a little butter and heat over medium heat. Pour in a small amount of the batter (about 1/4 cup) to form a crepe, swirling the pan to spread it evenly. Cook for about 2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for an additional minute. Repeat with remaining batter, adding more butter as needed.
- Place a spoonful of the filling on one edge of each crepe, then fold in the sides and roll up tightly. Repeat with all crepes and filling.
- Serve the blintzes warm, garnished with a dollop of sour cream or a sprinkle of fresh herbs if desired.
