Ingredients

  • All-purpose flour - 1 cup (120g)
  • Eggs - 2 large
  • Milk - 1 cup (240ml)
  • Salt - 1/4 teaspoon
  • Butter - 2 tablespoons (30g), melted
  • Fresh spinach - 2 cups (60g), chopped
  • Mushrooms - 1 cup (70g), diced
  • Onion - 1 small, finely chopped
  • Cream cheese - 100g, softened
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for 10 minutes.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
  3. Add the diced mushrooms and cook for another 5 minutes until they are soft and any moisture has evaporated.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  5. In a separate bowl, mix the sautéed vegetables with the softened cream cheese and black pepper until well combined.
  6. In a non-stick skillet, add a little butter and heat over medium heat. Pour in a small amount of the batter (about 1/4 cup) to form a crepe, swirling the pan to spread it evenly. Cook for about 2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for an additional minute. Repeat with remaining batter, adding more butter as needed.
  7. Place a spoonful of the filling on one edge of each crepe, then fold in the sides and roll up tightly. Repeat with all crepes and filling.
  8. Serve the blintzes warm, garnished with a dollop of sour cream or a sprinkle of fresh herbs if desired.
