Ingredients

  • Beef chuck - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Celery - 1 stalk, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Beef broth - 500 ml
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced beef and brown on all sides, about 5-7 minutes.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, add the minced garlic, chopped onion, diced celery, and carrot. Sauté for 5 minutes until softened.
  5. Stir in the diced zucchini and red bell pepper, cooking for an additional 3-4 minutes.
  6. Return the browned beef to the pot, then add the beef broth, dried thyme, dried rosemary, salt, black pepper, and bay leaf.
  7. Bring the stew to a boil, then reduce the heat to low and cover. Simmer for 30-35 minutes until the beef is tender.
  8. Remove the bay leaf, taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
