- Beef chuck - 300 grams, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Celery - 1 stalk, diced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Beef broth - 500 ml
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat.
- Add the diced beef and brown on all sides, about 5-7 minutes.
- Remove the beef from the pot and set aside.
- In the same pot, add the minced garlic, chopped onion, diced celery, and carrot. Sauté for 5 minutes until softened.
- Stir in the diced zucchini and red bell pepper, cooking for an additional 3-4 minutes.
- Return the browned beef to the pot, then add the beef broth, dried thyme, dried rosemary, salt, black pepper, and bay leaf.
- Bring the stew to a boil, then reduce the heat to low and cover. Simmer for 30-35 minutes until the beef is tender.
- Remove the bay leaf, taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
