- Carrots - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Beef broth - 500 milliliters
- Dried thyme - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cauliflower rice - 200 grams
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
- Add the beef stew meat to the pot, browning it on all sides for about 5-7 minutes.
