- 2 large bell peppers (any color) - 300g
- 200g Italian sausage (remove casings)
- 50g cooked quinoa
- 50g shredded mozzarella cheese
- 30g grated Parmesan cheese
- 1 clove garlic, minced
- 1/2 small onion, finely chopped
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the sausage to the skillet, breaking it apart with a spatula, and cook until browned and fully cooked.
- Stir in the cooked quinoa, Italian seasoning, salt, and pepper, mixing well. Remove from heat.
- Add the mozzarella and Parmesan cheeses to the sausage mixture, stirring until combined.
- Stuff each bell pepper with the sausage mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish and cover with foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are golden.
- Garnish with fresh parsley before serving.
