Ingredients

  • 2 large bell peppers (any color) - 300g
  • 200g Italian sausage (remove casings)
  • 50g cooked quinoa
  • 50g shredded mozzarella cheese
  • 30g grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/2 small onion, finely chopped
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the sausage to the skillet, breaking it apart with a spatula, and cook until browned and fully cooked.
  5. Stir in the cooked quinoa, Italian seasoning, salt, and pepper, mixing well. Remove from heat.
  6. Add the mozzarella and Parmesan cheeses to the sausage mixture, stirring until combined.
  7. Stuff each bell pepper with the sausage mixture, packing it tightly.
  8. Place the stuffed peppers upright in a baking dish and cover with foil.
  9. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the tops are golden.
  10. Garnish with fresh parsley before serving.
