- Potato - 1 medium, cubed
- Corn on the cob - 1 ear, cut into 2 pieces
- Green beans - 100 grams, trimmed
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Chicken broth - 500 ml
- Olive oil - 1 tablespoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until fragrant and translucent.
- Add the diced chicken breast to the pot and cook until lightly browned.
- Stir in the sliced carrots, chopped celery, cubed potato, and green beans. Cook for about 5 minutes, stirring occasionally.
- Pour in the chicken broth and add the corn pieces, bay leaf, salt, and black pepper. Bring to a boil.
- Reduce the heat to low and simmer for 25-30 minutes, or until the vegetables are tender.
- Remove the bay leaf, adjust seasoning if necessary, and stir in fresh parsley before serving.
