- Tomatillos - 250 grams
- Fresh cilantro - 30 grams
- Jalapeño pepper - 1 medium, seeded and chopped
- Garlic - 1 clove, minced
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Remove the husks from the tomatillos and rinse them under cold water.
- Place the tomatillos on a baking sheet and roast in the oven for about 10 minutes, or until they are tender and slightly charred.
- Allow the tomatillos to cool slightly, then transfer them to a blender.
- Add the fresh cilantro, chopped jalapeño, minced garlic, lime juice, olive oil, salt, and black pepper to the blender.
- Blend until smooth and adjust seasoning to taste.
- Serve immediately with tortilla chips or as a topping for tacos or grilled meats.
