Ingredients

  • Tomatillos - 250 grams
  • Fresh cilantro - 30 grams
  • Jalapeño pepper - 1 medium, seeded and chopped
  • Garlic - 1 clove, minced
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Remove the husks from the tomatillos and rinse them under cold water.
  3. Place the tomatillos on a baking sheet and roast in the oven for about 10 minutes, or until they are tender and slightly charred.
  4. Allow the tomatillos to cool slightly, then transfer them to a blender.
  5. Add the fresh cilantro, chopped jalapeño, minced garlic, lime juice, olive oil, salt, and black pepper to the blender.
  6. Blend until smooth and adjust seasoning to taste.
  7. Serve immediately with tortilla chips or as a topping for tacos or grilled meats.
