Ingredients

  • Salmon fillets - 2 x 150g
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Season the salmon fillets with salt and black pepper on both sides.
  3. Place the salmon fillets skin-side down in the skillet and cook for about 4-5 minutes until the skin is crispy.
  4. Flip the salmon fillets and cook for an additional 3-4 minutes, or until cooked through and flaky.
  5. While the salmon is cooking, in a small saucepan, heat the remaining 1 tablespoon of olive oil over low heat.
  6. Add the minced garlic to the saucepan and sauté for about 1 minute, being careful not to burn it.
