Ingredients

  • salmon fillets - 2 pieces (about 150g each)
  • fresh dill - 2 tablespoons, chopped
  • lemon - 1, juiced and zested
  • garlic - 2 cloves, minced
  • olive oil - 2 tablespoons
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • asparagus - 200g, trimmed
  • cherry tomatoes - 150g, halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the olive oil, lemon juice, lemon zest, minced garlic, chopped dill, salt, and black pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the dill mixture generously over the salmon.
  4. In a separate bowl, toss the asparagus and cherry tomatoes with a tablespoon of olive oil, salt, and pepper. Arrange them around the salmon on the baking sheet.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
