- salmon fillets - 2 pieces (about 150g each)
- fresh dill - 2 tablespoons, chopped
- lemon - 1, juiced and zested
- garlic - 2 cloves, minced
- olive oil - 2 tablespoons
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- asparagus - 200g, trimmed
- cherry tomatoes - 150g, halved
Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix the olive oil, lemon juice, lemon zest, minced garlic, chopped dill, salt, and black pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the dill mixture generously over the salmon.
- In a separate bowl, toss the asparagus and cherry tomatoes with a tablespoon of olive oil, salt, and pepper. Arrange them around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
