- Salmon fillets - 2 (150g each)
- Asparagus - 200g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Butter - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Wash and trim the asparagus, cutting off the tough ends.
- In a large mixing bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper until well coated.
- Place the asparagus on a baking sheet lined with parchment paper and roast in the oven for 10 minutes.
- While the asparagus is roasting, season the salmon fillets with salt and pepper on both sides.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the salmon skin-side down and cook for 4-5 minutes until crispy.
- Carefully flip the salmon and add the minced garlic and butter to the skillet. Cook for another 4-5 minutes until the salmon is cooked through and the garlic is fragrant.
- Remove the asparagus from the oven after 10 minutes and add the salmon fillets on top. Drizzle with lemon juice and return to the oven for an additional 3-4 minutes.
- Serve the salmon and asparagus garnished with chopped parsley.
