Ingredients

  • Salmon fillets - 2 (150g each)
  • Asparagus - 200g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Butter - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and trim the asparagus, cutting off the tough ends.
  3. In a large mixing bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper until well coated.
  4. Place the asparagus on a baking sheet lined with parchment paper and roast in the oven for 10 minutes.
  5. While the asparagus is roasting, season the salmon fillets with salt and pepper on both sides.
  6. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the salmon skin-side down and cook for 4-5 minutes until crispy.
  7. Carefully flip the salmon and add the minced garlic and butter to the skillet. Cook for another 4-5 minutes until the salmon is cooked through and the garlic is fragrant.
  8. Remove the asparagus from the oven after 10 minutes and add the salmon fillets on top. Drizzle with lemon juice and return to the oven for an additional 3-4 minutes.
  9. Serve the salmon and asparagus garnished with chopped parsley.
