Ingredients

  • Salmon fillet - 300 grams
  • Soy sauce - 60 ml
  • Brown sugar - 2 tablespoons
  • Mirin (or rice vinegar) - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Cooked rice - 200 grams (for serving)
  • Steamed broccoli - 200 grams (for serving)

Steps

  1. In a small bowl, whisk together soy sauce, brown sugar, mirin, minced garlic, grated ginger, and sesame oil to create the teriyaki sauce.
  2. Place the salmon fillet in a shallow dish and pour half of the teriyaki sauce over it, ensuring it's well coated. Marinate for 15 minutes.
  3. Preheat a non-stick skillet over medium heat. Remove the salmon from the marinade and reserve the marinade for later.
  4. Cook the salmon skin-side down in the skillet for about 5-6 minutes, until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes, until cooked through.
  5. In the last minute of cooking, pour the reserved teriyaki sauce over the salmon, allowing it to bubble and glaze the fish.
  6. Remove the salmon from the skillet and let it rest for a couple of minutes. Meanwhile, prepare your serving plates with cooked rice and steamed broccoli.
  7. Slice the salmon and place it on top of the rice. Drizzle any remaining teriyaki sauce from the pan over the dish, and garnish with chopped green onions and sesame seeds. Serve immediately.
