Ingredients

  • Cauliflower - 1 medium head

  • Radishes - 4, thinly sliced
  • Salmon roe - 100 grams
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Remove the leaves and stem from the cauliflower, then cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. Heat a large skillet over medium heat and add the cauliflower rice. Cook for about 5-7 minutes, stirring occasionally, until tender. Remove from heat.
  4. In a bowl, combine the diced avocado, cucumber, radishes, fresh dill, lemon juice, olive oil, salt, and black pepper. Mix gently to combine.
