Ingredients
- All-purpose flour - 125 grams
- Unsalted butter - 60 grams, chilled and cubed
- Ice water - 30 ml
- Fresh salmon fillet - 150 grams, cooked and flaked
- Eggs - 2 large
- Heavy cream - 100 ml
- Milk - 50 ml
- Fresh dill - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour and chilled butter, using a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Roll out the chilled dough on a floured surface to fit a 9-inch (23 cm) pie dish. Place the rolled dough into the dish and trim any excess.
- In a bowl, whisk together the eggs, heavy cream, milk, dill, salt, and pepper until well combined.
- Spread the flaked salmon evenly over the crust, followed by the chopped green onions.
- Pour the egg mixture over the salmon and onions, ensuring an even distribution.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Allow to cool for 5-10 minutes before slicing and serving.
