Ingredients

  • All-purpose flour - 125 grams
  • Unsalted butter - 60 grams, chilled and cubed
  • Ice water - 30 ml
  • Fresh salmon fillet - 150 grams, cooked and flaked
  • Eggs - 2 large
  • Heavy cream - 100 ml
  • Milk - 50 ml
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour and chilled butter, using a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Add the ice water, one tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough on a floured surface to fit a 9-inch (23 cm) pie dish. Place the rolled dough into the dish and trim any excess.
  5. In a bowl, whisk together the eggs, heavy cream, milk, dill, salt, and pepper until well combined.
  6. Spread the flaked salmon evenly over the crust, followed by the chopped green onions.
  7. Pour the egg mixture over the salmon and onions, ensuring an even distribution.
