- cooked salmon - 200 grams
- panko breadcrumbs - 1 cup
- green onion - 2 tablespoons, finely chopped
- fresh dill - 1 tablespoon, chopped
- egg - 1, beaten
- mayonnaise - 2 tablespoons
- lemon juice - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - 2 tablespoons for frying
Steps
- In a mixing bowl, flake the cooked salmon into small pieces.
- Add the panko breadcrumbs, chopped green onion, fresh dill, beaten egg, mayonnaise, lemon juice, salt, and black pepper to the bowl.
- Mix all ingredients together until well combined.
- Form the mixture into small patties, about 2 inches in diameter.
- Heat olive oil in a skillet over medium heat.
- Once the oil is hot, add the salmon patties to the skillet, cooking for 4-5 minutes on each side or until golden brown.
- Remove the croquettes from the skillet and place them on a paper towel to drain excess oil.
