Ingredients

  • cooked salmon - 200 grams
  • panko breadcrumbs - 1 cup
  • green onion - 2 tablespoons, finely chopped
  • fresh dill - 1 tablespoon, chopped
  • egg - 1, beaten
  • mayonnaise - 2 tablespoons
  • lemon juice - 1 tablespoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons for frying

Steps

  1. In a mixing bowl, flake the cooked salmon into small pieces.
  2. Add the panko breadcrumbs, chopped green onion, fresh dill, beaten egg, mayonnaise, lemon juice, salt, and black pepper to the bowl.
  3. Mix all ingredients together until well combined.
  4. Form the mixture into small patties, about 2 inches in diameter.
  5. Heat olive oil in a skillet over medium heat.
  6. Once the oil is hot, add the salmon patties to the skillet, cooking for 4-5 minutes on each side or until golden brown.
  7. Remove the croquettes from the skillet and place them on a paper towel to drain excess oil.
  8. Serve warm with your choice of tartar sauce or a squeeze of lemon.
