Ingredients

  • Salmon fillet - 250 grams, skinless and boneless
  • Breadcrumbs - 50 grams (preferably whole wheat)
  • Green onion - 2 stalks, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Plain yogurt - 100 grams
  • Dijon mustard - 1 teaspoon

Steps

  1. 1. In a food processor, pulse the salmon fillet until finely chopped but not pureed.
  2. 2. In a mixing bowl, combine the chopped salmon, breadcrumbs, green onion, parsley, lemon juice, minced garlic, egg, salt, and black pepper. Mix well until all ingredients are combined.
  3. 3. Form the mixture into two equal patties, about 1.5 cm thick. Refrigerate for 10-15 minutes to help them firm up.
  4. 4. While the patties are chilling, prepare the yogurt sauce by mixing the plain yogurt, Dijon mustard, and a pinch of salt in a small bowl. Set aside.
  5. 5. Heat olive oil in a non-stick skillet over medium heat. Cook the salmon patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  6. 6. Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly browned.
  7. 7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a salmon patty, sliced tomato, and cucumber. Drizzle with the yogurt sauce, then top with the other half of the bun.
