- Salmon fillet - 250 grams, skinless and boneless
- Breadcrumbs - 50 grams (preferably whole wheat)
- Green onion - 2 stalks, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Plain yogurt - 100 grams
- Dijon mustard - 1 teaspoon
Steps
- 1. In a food processor, pulse the salmon fillet until finely chopped but not pureed.
- 2. In a mixing bowl, combine the chopped salmon, breadcrumbs, green onion, parsley, lemon juice, minced garlic, egg, salt, and black pepper. Mix well until all ingredients are combined.
- 3. Form the mixture into two equal patties, about 1.5 cm thick. Refrigerate for 10-15 minutes to help them firm up.
- 4. While the patties are chilling, prepare the yogurt sauce by mixing the plain yogurt, Dijon mustard, and a pinch of salt in a small bowl. Set aside.
- 5. Heat olive oil in a non-stick skillet over medium heat. Cook the salmon patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- 6. Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly browned.
- 7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a salmon patty, sliced tomato, and cucumber. Drizzle with the yogurt sauce, then top with the other half of the bun.
- 8. Serve immediately and enjoy your delicious salmon burgers!
