Ingredients
- Salmon fillets - 2 pieces (150g each)
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Cherry tomatoes - 100g, halved
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the sliced zucchini, chopped bell pepper, halved cherry tomatoes, minced garlic, olive oil, salt, and black pepper. Toss to coat the vegetables evenly.
- Spread the vegetable mixture on one side of a baking dish, creating a bed for the salmon.
- Place the salmon fillets on the other side of the baking dish.
- Drizzle the lemon juice over the salmon and sprinkle with fresh dill.
- Bake in the preheated oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let cool for a few minutes before serving.
