Ingredients

  • Salmon fillets - 2 pieces (150g each)
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Cherry tomatoes - 100g, halved
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the sliced zucchini, chopped bell pepper, halved cherry tomatoes, minced garlic, olive oil, salt, and black pepper. Toss to coat the vegetables evenly.
  3. Spread the vegetable mixture on one side of a baking dish, creating a bed for the salmon.
  4. Place the salmon fillets on the other side of the baking dish.
  5. Drizzle the lemon juice over the salmon and sprinkle with fresh dill.
  6. Bake in the preheated oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let cool for a few minutes before serving.
