Ingredients

  • 2 boneless, skinless chicken breasts - 400 grams
  • 1 tablespoon olive oil - 15 ml
  • 1 tablespoon fresh sage, chopped - 15 grams
  • 1 tablespoon fresh juniper berries, crushed - 15 grams
  • 2 cloves garlic, minced - 6 grams
  • 1 teaspoon sea salt - 5 grams
  • 1/2 teaspoon black pepper - 2 grams
  • 1 teaspoon paprika - 2 grams
  • Juice of 1 lemon - 30 ml

Steps

  1. In a mixing bowl, combine olive oil, chopped sage, crushed juniper berries, minced garlic, sea salt, black pepper, paprika, and lemon juice to create a marinade.
  2. Place the chicken breasts in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes to allow the flavors to penetrate the meat.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.
  6. Let the chicken rest for 5 minutes before slicing and serving.
