- Unsalted butter - 1 tablespoon
- Parmesan cheese, grated - 30 grams
- Fresh parsley, chopped - 2 tablespoons

Steps
- In a small saucepan, heat the vegetable broth and add the saffron threads, allowing them to infuse while you prepare the risotto.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 2-3 minutes.
- Add the Arborio rice to the skillet, stirring to coat the rice in the oil, and toast for about 2 minutes until the rice becomes slightly translucent.
- Pour in the dry white wine and stir until it is mostly absorbed by the rice.
- Begin adding the saffron-infused vegetable broth one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next, about 18-20 minutes total until the rice is creamy and al dente.
- In the last 5 minutes of cooking, stir in the shrimp, cooking until they turn pink and opaque.
- Once the rice is cooked and creamy, remove from heat and stir in the butter and grated Parmesan cheese. Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
