  • Dry white wine - 100 ml
  • Shallot, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Unsalted butter - 1 tablespoon
  • Parmesan cheese, grated - 30 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a small saucepan, heat the vegetable broth and add the saffron threads, allowing them to infuse while you prepare the risotto.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 2-3 minutes.
  3. Add the Arborio rice to the skillet, stirring to coat the rice in the oil, and toast for about 2 minutes until the rice becomes slightly translucent.
  4. Pour in the dry white wine and stir until it is mostly absorbed by the rice.
  5. Begin adding the saffron-infused vegetable broth one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next, about 18-20 minutes total until the rice is creamy and al dente.
  6. In the last 5 minutes of cooking, stir in the shrimp, cooking until they turn pink and opaque.
  7. Once the rice is cooked and creamy, remove from heat and stir in the butter and grated Parmesan cheese. Season with salt and black pepper to taste.
  8. Garnish with fresh parsley before serving.
